Tomatoes are starting to come good now, but if you love a caprese salad, try this one for when tomatoes aren’t at their best.

Ingredients

  • 2 pieces soft mozzarella in whey

  • ½ cup mixed olives, pitted and roughly chopped

  • 3 tbsp extra virgin olive oil

  • 1 tbsp red wine vinegar

  • ¼ tsp honey

  • 1 tbsp finely shredded parsley

Method

  1. Step 1

    Drain the mozzarella and cut into 1cm slices. Arrange on a serving plate.

  2. Step 2

    Combine the olives, olive oil, vinegar, honey and parsley and mix to combine. Spoon over the mozzarella and serve.
